There is a dispute resolution process through which you can respond and submit evidence to make your case that the payment was valid. Once the dispute is created, you have a limited amount of time (usually 6-7 days) to respond with evidence. If you do not submit evidence by the time the deadline passes, the cardholder wins the dispute and keeps the funds.
